A salted nut roll is a homemade version of the classic candy bar with a soft caramel and marshmallow center surrounded by layers of salted peanuts.

Salted Nut Roll

What is a salted nut roll? The salted nut roll is a candy bar that has layers of salted peanuts between a nougat and caramel center. This classic candy bar originated in the Midwestern state of Minnesota and was created by Pearson’s Candy Company in 1933. The original price of this candy bar was five cents! This depression-era candy bar is still being manufactured today, although it will cost you a lot more than five cents.

The salted nut roll has even expanded into a peanut butter version and several different seasonal flavors including pumpkin spice and apple. Home bakers found ways to create their own homemade versions throughout the years; there is even a salted nut roll stand at the Iowa State Fair that is one of my favorite food stands to visit! Luckily, making your own homemade version is simple. Read below on how to make this recipe.

How to Make this Recipe

Making this homemade salted nut roll is pretty simple with just five ingredients, can be made either using a double boiler or a microwave safe bowl and yields 24 large salted nut rolls or 72 small pieces.

Ingredients

  • Salted peanuts
  • Miniature marshmallows
  • Sweetened condensed milk
  • Caramel baking chips (*NOT caramel baking bits) ** see below for substitutions
  • Unsalted butter

Half of the salted peanuts are spread into a standard 9″x13″ greased baking dish. The caramel baking chips (not bits) are melted using either a double boiler or a microwave safe dish with the unsalted butter before the sweetened condensed milk is mixed in. Mini marshmallows are added to this mixture and then it’s poured on the first layer of salted peanuts before topping with the remaining salted peanuts. The salted nut rolls are chilled until set before cutting.

Tips for Salted Nut Roll

  • Peanut butter or butterscotch baking chips can be substituted for the caramel baking chips
  • Store the salted nut rolls in an airtight container or freeze up to 45 days

Equipment

  • standard 9" x 13" baking dish
  • parchment paper or aluminum foil
  • double boiler or microwave safe bowl

Ingredients
  

  • 10 oz. salted peanuts
  • 2 ½ Tablespoons unsalted butter
  • 10 oz. pkg caramel baking chips *NOT caramel baking bits
  • 14 oz. can sweetened condensed milk
  • 2 cups miniature marshmallows

Instructions
 

  • Line (with parchment paper or aluminum foil) and grease a standard 9”x13” baking pan.
  • Spread half of the 10 oz. salted peanuts into the bottom of the pan.
  • Using a double boiler or microwave on 50% power, melt the10 oz. pkg caramel baking chips (not caramel baking bits) and 2 ½ Tablespoons unsalted butter.
  • Once melted, add in the 14 oz. can sweetened condensed milk and stir until smooth. Fold in the 2 cups miniature marshmallows
  • Pour over the first salted peanut layer; top with remaining salted peanuts.
  • Refrigerate 2 hours, or until set. *Cut into 12 horizonal rows; cut in half to yield 24 nut rolls or cut 6 vertical rows to yield 72 pieces.
