Orange Marmalade Muffins

Orange marmalade muffins are an old-fashioned, citrusy muffin thanks to the addition of orange marmalade and are topped with a sweet, streusel topping.

For the muffins 2 cups all-purpose flour 1/3 cup granulated sugar 1/2 teaspoon salt 2 teaspoons baking powder 2 Tablespoons unsalted butter, melted 1 large egg 1 teaspoon fresh orange zest 1 cup milk 1/3 cup orange marmalade For the streusel topping 1 Tablespoon unsalted butter, melted 2 Tablespoons granulated sugar 3 Tablespoons all-purpose flour
In a large mixing bowl, whisk or sift the all-purpose flour, granulated sugar, salt, baking powder.
Whisk in the melted butter, egg, orange zest, orange marmalade and milk. Only mix until combined.
Scoop batter evenly into lined muffin tin.
Combine the remaining melted butter, granulated sugar and all-purpose flour; mix with a fork until crumbly. Evenly sprinkle on top of each muffin.
Bake at 375°F for 12-15 minutes, or until a toothpick inserted in the center of each muffin comes out clean.
Serve with additional orange marmalade.
You can substitute jam for the marmalade; however, the orange flavor will not be as strong
Store muffins in an airtight container up to 72 hours
