Blackberry buckle is a classic streusel topped, soft and buttery cake full of fresh blackberries. This is a great summertime recipe for using ripe berries!
Cream ¼ cup of the butter and ½ cup of the granulated sugar together with a mixer.
Add in the egg and the vanilla.
Sift 1 cup of the flour with the baking powder and salt. Add to the creamed mixture, alternating with the buttermilk, starting and ending with the dry ingredients.
Spread batter into a greased 8” square baking dish. Sprinkle the blackberries over the batter.
Combine the remaining sugar, flour and nutmeg. Cut in the remainder of the butter until crumbly; then sprinkle crumble topping over the berries.
Bake 40-45 minutes. Serve warm with whipped cream.
