Refrigerator cucumber slices are an old-fashioned slightly pickled, slightly sweet recipe for summer fresh cucumbers and onions. The recipe for these refrigerator cucumber slices is adapted from my grandpa’s recipe, which he always called “slicers.” He always had a bowl of these garden fresh cucumber slices in his refrigerator each summer! After my grandpa retired from farming, he continued to grow a large garden. These cucumbers were one of my favorite things to eat from his garden and this recipe is really nostalgic to me for that reason. The next time you find yourself with an abundance of cucumbers, this is a great recipe to make! They can be eaten alone or served as a side dish. Read below on how to make this simple recipe.

How to Make This Recipe
I have slightly adapted my Grandpa’s original recipe for these refrigerator cucumber slices; his version is a lot sweeter than I prefer. This recipe is really simple to make, although it does require the cucumber slices to be refrigerated for several hours before serving. This recipe serves 6 as a side dish, but can easily be doubled (or tripled!)
Ingredients
- fresh cucumbers
- red onion
- white vinegar
- granulated sugar
- water
- salt and pepper
The mixture of vinegar, water and sugar is brought to a boil on the stovetop. Then, salt and pepper are added to taste and the entire mixture is poured over the sliced cucumbers and onions. The cucumber slices need refrigerated for a minimum of 4 hours. Over time, the pickled mixture will soften both the cucumbers and onions. The refrigerator cucumber slices will keep up to 72 hours.

Tips for Refrigerator Cucumber Slices
- Can substitute white onion for the red onion
- Can substitute apple cider vinegar for the white vinegar (apple cider vinegar is slightly more sweet)
- This recipe can easily be doubled or tripled
- The cucumbers will continue to release liquid as they are allowed to sit in the refrigerator

Equipment
- small saucepan
- medium sized mixing bowl
- cutting board and sharp knife
Ingredients
- 2 large cucumbers, peeled and sliced
- 1 medium red onion, sliced
- 1/2 cup water
- 1/2 cup white vinegar
- 1/4 cup granulated sugar
Instructions
- Place the 2 large cucumbers, sliced and 1 medium red onion, in a medium sized mixing bowl.
- Combine the 1/2 cup white vinegar, 1/2 cup water and 1/4 cup granulated sugar in a small saucepan over medium-high heat. Heat until it boils and the sugar has dissolved completely.
- Remove mixture from heat; immediately pour over cucumbers and onions. Cover and refrigerate for at least 4 hours, up to 72 hours.
Notes
- Can substitute white onion for the red onion
- Can substitute apple cider vinegar for the white vinegar (apple cider vinegar is slightly sweeter)

- Cucumbers will continue to release liquid as they are allowed to sit in the refrigerator
